I had this recently and it was genuinely the nicest thing ever; couple people requested the recipe

 

Tips: a whole shin of beef is really hard to find, easier to just get yourself cut parts and then it gets covered entirely by the braising stock too

 

Best part about this is that these cuts of meat are really cheap because they're so tough and sinewy, really impressive way to cook beef and it tastes god damn delicious
